From the beginning of October, Le Van persimmon production facility of Ms. Nguyen Thi Lan Anh's family at 45 (Khe Sanh Street, Ward 10, Da Lat City , Lam Dong) has been harvesting persimmons and processing them by drying method. wind.
According to the owner of the establishment, in Da Lat there are many different types of persimmons and to make the product delicious, people often choose copper square persimmon, fire egg persimmon or eight sea persimmon as raw materials.
The production of wind-dried persimmons requires meticulousness from harvesting to pre-processing and processing. Usually gardeners will choose large, beautiful fruits with enough sugar to harvest.
"The harvest must also ensure that the fruit is not scratched, not bruised. After cleaning, peel, disinfect and then hang it on the rig to dry", Ms. Nguyen Thi Lan He shared.
Workers hang persimmons in the disinfection area before moving to the drying house.
According to the owner of the wind-drying persimmon facility , people in Da Lat currently process persimmons by different methods such as wind drying, heat drying or charcoal drying. Each method, each family has its own secret to creating a unique product.
Ms. Dang Thi Thu Van, production base of Le Van persimmons, said that in addition to the persimmons harvested from the 0.7ha garden, each month the family buys about 20 tons of fruit from households in the area to serve processing. variable.
"Wind-dried persimmons bring very high economic value, but the risks are not small. There was a time when persimmons were just hung up and were affected by storms, causing the fruit to leak, fall or ferment, so it had to be discarded. On rainy and windy days, the damage rate is sometimes up to 80%," said Ms. Dang Thi Thu Van.
According to the process, the persimmons, after hanging on the rig, will be dried by wind according to Japanese technology within 20 days with a temperature of about 20 to 25 degrees Celsius.
"After 20 days, the water in the persimmon fruit is almost completely removed to achieve a soft, sweet taste and a characteristic aroma. This product will then be classified, packaged and vacuumed and then supplied to the market. ", Nguyen Thi Lan Anh confided.
Currently, along with the production of air-dried persimmon products, Ms. Nguyen Thi Lan Anh's family is also open for tourists to visit, take souvenir photos and try the product.
Le Thi Thu Thuy, a tourist from Hanoi, said that she tried the wind-dried persimmon product of Da Lat many years ago, but this is the first time to experience the rose garden and visit the processing process. She confided: " Da Lat wind-dried persimmon is very special. The product is soft, fragrant and very delicious, so I will buy some to bring back to Hanoi as a gift."
Currently, the owner of Le Van wind-drying persimmon facility supplies hundreds of kilograms of wind-dried persimmons to the market every month. "Every kilogram of product costs up to 500,000 VND, but we still don't have enough goods to meet customer demand," the owner shared.
